Rhubarb Cobbler

Ingredients

  • 4 cups diced rhubarb
  • 1 cup sugar
  • 2 tbsp. flour
  • 1 tbsp. lemon juice
  • ½ cup water
  • 3 tbsp. butter
  • ¼ tsp. vanilla

Mix and pour into shallow baking dish, cover with crust.

Crust

½ cups flour, 3 tsp. baking powder, ¼ tsp. salt, 3 tbsp. shortening, 1 egg, 1/3 cup milk.
